A two-times distilled, fine Zivania, made out of over-ripe grapes of the indigenous varieties ‘Mavro’ & ‘Xynisteri’. This mountainous vineyard is every year cultivated to produce not else but this fine spirit. We slightly sun-dry the harvested grapes and delicately smoke them by burning vine branches from last year’s pruning. This adventurous distillation is held by an old-forged copper pot, flamed by wood sustainably cropped from the near-by forest. Great pairing with meze and thoughtful company.
