OUSIA - Fine Island Zivania
45%vol, 500ml (950gr)
Crafted from Cyprus’ indigenous grape varieties, Mavro and Xynisteri, our Zivania begins with carefully selected, late-harvested fruit sourced from high-altitude vineyards cultivated exclusively for its production. Once gently transported to the winery, the grapes undergo a brief sun-drying period of approximately one week, allowing their aromatic complexity and finesse to develop naturally.
The grapes are then subjected to our bespoke smoking process, using vine cuttings pruned from the very same vineyards. This delicate technique imparts a subtle, elegant smokiness that enhances the character of the spirit without overpowering its natural expression.
The vinification that follows is a defining stage in the journey, carefully conducted to create a refined and expressive base wine, perfectly suited for distillation.
At the heart of the process stands our old, hand-forged copper pot still. Acquired several years ago and meticulously restored to our exacting standards, it embodies our commitment to craftsmanship and tradition. We have come to value the human= touch above all else, and every bottle we produce is the result of skilled hands working with time-honoured tools. This remarkable piece of pure copper contributes unmistakably to the spirit’s authenticity and depth of character, making it an irreplaceable part of our craft.
The fire beneath the still is fuelled exclusively by pinewood sourced from our neighbouring forest, harvested with respect for a responsible and sustainable forestry practice.
Slowly double distilled over a gentle wood fire, every precious drop is collected with patience and precision. The result is OUSIA—our Fine Island Zivania. Twice distilled, meticulously handcrafted, and a true expression of Cyprus in its purest form.
