Fresh Xynisteri 2025

Grown on limestone-rich mountain soil, where cool elevations preserve the variety’s natural freshness and a beautifully balanced acidity alongside its etherial minerality. Single Vineyard Wine produced from 35y.o. vines in Pachna village, Krassochoria, Limassol District, Cyprus.

Fermented at a very low temperature, exclusively in s/steel to retain its pure fruit expression and aromatic freshness. Wine made following a low-intervention approach. Total annual production of 1,800 bottles. We chose a light glass bottle, aiming to increase its transportability and reduce its carbon footprint.

Youthful and fresh with a light effervescent character, aromas of green apple, pear, cut green grass with herbaceous freshness.

Best appreciated chilled, alongside oysters, refined citrus salads, or delicate prepared white fish. Enjoyed even on its own as evening apéritif. A wine perfect for those who enjoy lively and refreshing flavours.
