The Sun Drying Process

Late September. The grapes ripen beneath a fiery sun.

Protected from direct sunlight by the vine’s bushy leaves, the fruit grows
in a temperature-conrtolled haven.

During the pre-harvesting season, the excess folliage is gently picked away by hand

on several occasions, in order to gradually allow direct sunlight to gently kiss the grapes.

The sun drying process begins, lasting between forty to sixty days..
